Aglio e Olio
The Aglio e Olio recipe were created by poor farmer who had nothing but the most basic Italian ingredients. It is very easy to prepare with less than 30 minutes and yet it packed with flavour.
Serve 2-3 people
Prep time: 5 minutes ; Cooking Time : 15-17 minutes
300 gram of dry spaghetti
3 tablespoon of extra virgin olive oil
5 cloves of garlic
1/4 cup of fresh parsley
Bring a large pot of salted water to boil. Then add the pasta and cook according to package instructions. Drain the pasta and set it aside. ( reserve 1/2 to 1 cup of the cooking water)
Then, heat 3 tablespoons of the olive oil in a pan over low heat. Add the garlic cook until the garlic just begins to turn light golden-brown, 2 to 3 minutes. Add the parsley and pasta water to the pan over medium heat. Simmer until the liquid is reduced, about 3 minutes. Add the spaghetti and toss continuously until the sauce thickens and coats the pasta, 1 to 2 minutes. Serve immediately.
Notes : You can turn your Aglio e Olio into an exciting dish by adding salmon, minced meat, seafood, cheese, or chilli flakes.
